The soup is made from the seaweed-dashi of Osaka.

Here at Kasu-Udon Ebisuya, we are particular about our original dashi (soup) for udon that is packed with seaweed, a staple of Osaka.
Using more seaweed than normal udon tsuyu-sauce, and less dried bonito flakes and mirin that add sweetness.
Finally, by cooking the dashi with Abura-Kasu, the umami of the beef offal thoroughly melts into the dashi, creating a distinct flavor.
The simple, yet deep taste, which is similar to ox-tail soup, will be the perfect way to finish off after a night of drinking.
